The Emsland Group has expanded its product portfolio with its newly developed pea-based Clean Label Starch Empure® ES 300.
Given its excellent gelling and textural properties, Empure® ES 300 is especially suitable for producing the creamier and softer American Style Cheese Cakes. For that slightly brittle and sour cheesecake, Empure® KS 100 Clean Label Potato Starch is recommended.

Preparation:
- Beat the whole eggs and sugar on high speed for 2 minutes
- Add the starch and gently stir it in
- Add the dairy product, stir in for 30 seconds
- Prepare the base in a springform pan (e.g., short pastry or crushed graham crackers)
- Bake in a fan oven at 150 °C for 25 min.
- Allow the cake to cool overnight
