The trend towards Clean Label cannot be stopped. For consumers, not only is a short declaration list on processed foods important, but also the use of ingredients with which they are familiar.
To meet this need for simple ingredients, Tate & Lyle has expanded its line of functional, clean label starches. The latest addition is CLARIA EVERLAST, a Clean Label tapioca starch with excellent storage stability. This makes CLARIA EVERLAST a suitable starch for frozen products, such as deep-frozen patisserie, as well as for foods with low pH values, such as fruit preparations or yoghurt and (salad) sauces, for which a long shelf life in refrigeration is required.
Advantages at a glance:
- Freeze-thaw stability
- reduced syneresis and product integrity
- same process tolerance and storage stability as modified starches
- neutral taste and transparent colour
- optimal texture and viscosity formation
- Non-GMO starch declared as tapioca starch
CLARIA EVERLAST is available in three types, which differ in terms of process stability. This allows its use in various manufacturing processes such as pasteurisation, autoclaving, UHT and processes in an acidic matrix.
